Are there any hidden gems destinations in France worth visiting?

This will be my third time visiting France, so I've already seen basically all the main tourist attractions. That's why this time around I'm looking for something off the beaten path. Are there any great non-touristy places or underrated destinations in France I should include in my itinerary?

France is so full of niche attractions, off-the-beaten-path locations, and a world of culture that is only lightly touched on with the "normal" tourism routes.
If you feel like you've seen everything France has to offer, then consider visiting some of the following:
- Annecy: Known as the "Venice of the Alps" thanks to its canals, can be found in the French Alps
- Colmar: If you like picture-perfect towns with colorful half-timbered houses, cobblestone streets, and flower-filled canals then Colmar is a must
- Carcassonne: Found in the Languedoc region, this is a medieval fortified city that is home to The Citadel of Carcassonne which is a UNESCO World Heritage site
- Corsica: Although it's growing in popularity (so you may have already visited), Corsica is worth a mention as it's a picture-perfect island paradise in the Mediterranean Sea
